Seafood Stuffed Peppers are one of my favorite New Orleans dishes.
We had boiled crab for Easter, so after peeling all the leftovers and saving the meat it only makes sense that I make these. Bell peppers have also been on sale.
*If you are looking for crab meat, I find the Costco price is the best around!
Ingredients:
1/2 lb. solid margarine
3/4 cup green bell peppers, finely chopped
1/2 cup celery, finely chopped
5 tsp garlic, chopped
3 cups yellow onions, finely chopped
1 Tbsp salt
1 tsp black pepper
1 tsp red pepper
1 lb. FRESH shrimp (90/110 ct)
1 lb. jumbo lump crab meat
1 cup green onions, bottoms and tops, finely chopped
1/2 cup parsley, finely chopped
3 1/2 packed cups white bread crumbs (white bread finely chopped)
Directions
8 cleaned bell peppers cut in half lengthwise. Put the 16 halves into a steamer for 3 minutes.

Put crab meat in sheet pan and remove shells, do not break up crab meat. Set aside.
In large skillet, melt 1/2 Lb. solid margarine on a low fire and add 3/4 C green bell pepper, 1/2 C of celery, 3 C of yellow onions and 5 tsp of garlic. Saute for 15 minutes.

Add 1 Tbsp salt, 1 tsp black pepper, 1/2 tsp red pepper; mix well together.
Then add 1 lb. shrimp, mix well and cook 5 minutes. TURN OFF.
Add 1 C green onions, 1/2 C parsley, and 3 1/2 C bread crumbs and mix well.
Then add 1 lb. shrimp, mix well and cook 5 minutes. TURN OFF.

Lastly add 1 lb. of crab meat (try not to break it up) and mix.
Use 1/2 C measure to mold 1/2 cup of stuffing on shell and form.
Bake at 350 degrees for 12 to 15 minutes
