Hearthstone Kitchen & Cellar is located inside Red Rock Hotel and Casino. The brainchild of world-renowned Chef Brian Massie, offers guests a sophisticated house-made fare from the highest quality sourced ingredients. You will feel right at home with its eclectic rustic interiors. Just passed the hostess station, you will be greeted with a wall of modern mounted deer art. The restaurant itself makes you feel like you are part of their extended home kitchen. The kitchen is partly interwoven into the dining area. Off to the left you will see some of the staff and chefs creating or putting finishing touches on menu items alongside bar stools. In the heart, stands two rustic wood-burning ovens where flatbreads and more are cooked to perfection. We were amazed by the antique hand-crank meat slicer where all charcuterie is prepared. There is an amazing seafood market display of fresh oysters, shrimp and more. Next is a very elongated bar area equipped with spirits and an expansive wine selection. Tables abound along with banquettes leading out to the patio. Rustic ambiance with clear lights make this gorgeous backdrop on any Vegas night.

I love that Hearthstone is local...you get quality food without having to travel to the strip.
The menu is more on the sophisticated side, even though the decor is rustic and relaxed.
It's convenient and is perfect for date night, girls night out and even business dinners.
You will be impressed with the staff as well.
They were really attentive and knowledgeable about the food and the wine.

Hearthstone Review
My husband and I dined at Hearthstone for the first time this summer.
We celebrated our 15th anniversary with a dinner date here. It was the perfect spot for us to cozy in and relax, yet dine on sophisticated food.

Appetizers
I suggest starting off a meal with an appetizer or two.
We sampled the meatballs, chicken wings and Snow Creek oysters.

 Meatballs
Braised short-ribs and San Marzano tomato marinara
These meatballs were so tender and flavorful. It was like tasting Italy in my mouth.
The sauce has just the right acidity from the tomatoes that pair well with the savory meatballs.

Lollipop Chicken Wings
Buffalo style with a celery dipping sauce
These are so cute and sophisticated! One of Chef Massie's signature dishes, people
have enjoyed this dish at other restaurants. It is a creamy classic buffalo style sauce.
The chef has french lollipop'd the flat part of the wings to create these bite-sized chicken wings.
The cool celery dipping sauce is a perfect counterbalance to the tangy wings.

Hand Shucked Oysters
We selected the Snow Creek, WA oysters. The selection changes with the seasons.
There were several Washington and Maine options. These oysters were very fresh as was all the seafood displayed.

Flatbreads
D.O.C.
Buffalo mozzarella, basil and chili
This combination is a play on the traditional Margherita style pizza. It has been kick up a
notch with the addition of chili. It is a perfect blend of seasoning and not spicy at all.
The buffalo mozzarella is rich and creamy and balanced with the tangy tomato sauce.
The fresh basil, that I watched the chef pick straight from the plant, added the depth of Italian flavor
I was expecting from the pizza.

Entrees
There is a great balance and selection of entrees available.
You are sure to find something to fall in love with. I had the Poached Salmon and my husband had the Rib Cap Steak. There are no sides per say with the entrees, but there is a selection of those to add on as well. We added a seasonal item; Mexican Grilled Corn. We both loved our entrees. My mouth is watering just typing this...

Poached King Salmon
Spring vegetables, wild mushrooms and smoked piementon
I loved this dish. I couldn't get enough of the pea puree and vegetables.
The salmon was cooked to perfection; flaky, tender and succulent.
There was a great char crust and the smoked piementon gave it a smoke flavor.
The pea puree was creamy and sweet. The spring vegetables was a blend of white and green asparagus cut on the bias, they were crunchy yet cooked. The mushrooms had a chew to them and were earthy. A great balance of flavors on the plate. I would highly recommend this dish to any salmon fan.

Char Grilled Rib Cap Steak
Roasted cippolini onions and pinot noir
The Rib Cap Steak has been char grilled. We ordered ours medium, as that is how my husband prefers it. It was so delicious, yes, I had bite or two. The Pinot Noir wine reduction gave a balance to the dish and the onions roasted were sweet and paired well with the steak.

Mexican Grilled Corn
These sweet cobettes were grilled to perfection. It had a great balance of char bits with a mayo and butter blend basted. The cheese addition was a great tang to counterbalance the sweetness of the corn.
This was so delicious...you cannot go wrong with this side.

Dessert
Save room for dessert and time...you won't regret it.
Milk Chocolate Souffle
Almonds, milk chocolate chips and coffee creme anglaise
This souffle does take minutes to prepare, but it is worth the wait.
The anticipation of breaking the shell was too much. The chocolate chips gave it that goodness you can only get from chocolate. The sauce was creamy with almonds on top. They both paired well together. It was served with two spoons and that was spot on, as it is something easily shared.

Peanut Butter Lava Cake
Butterscotch, roasted banana and brown butter ice cream
This was warm, gooey and nutty. It was very rich, but the cream and brown butter ice cream cut the decadence perfectly. I have had many of molten cakes and this one was a pleasant twist on the traditional chocolate cakes. I couldn't pick just one thing out that was my favorite. The warm peanut butter sauce, the peanut butter cake, butterscotch, roasted bananas, the brown butter ice cream atop with crushed peanuts and edible flowers were all delectable.
It felt like sinning, but worth every moment.

All and all, our meal was perfect. The waiter was very attentive and we had a great anniversary dinner. Which was not withstanding leftover containers. These guys also host a brunch on Sundays. That will be the next thing we check out! Give them a try and let us know what you thought.
