Pineapple Coconut Water Popsicles

I have to admit...this isn't really a recipe. It's just 2 ingredients and of course you can modify this thing like crazy. However, if you are a coconut water fan - these are a must try!
They are so refreshing on a hot day! Helps you stay hydrated and you won't feel guilty either.

I do find using a Zoku or any other quick frozen popsicle maker will help you keep the fruit in place on the sides exactly how you want. I have the Hamilton Beach quick popsicle maker and it works great too. Or you can cut the pineapple just shortly under the width of the popsicle cavity so that you can stack them to give even distribution. Otherwise, the fruit will go to the bottom - of course, this is a fun look to. So, whatever mood you are in, go with that.

Pineapple Coconut Water Popsicles
Ingredients
  • 1/4 Cup Pineapple (Fresh)
  • 2 Cups (depends on amount of fruit used) Coconut Water
Instructions
Cut pineapple into small thin chunks.Place pineapple against the walls of the popsicle cavities, if using a quick frozen pop maker. (You'll need to freeze the base overnight). Follow the pop maker instructions. Otherwise, just place in cavities.Pour coconut water to fill.If not using a quick pop maker, place in freezer overnight.
